How long it takes to create your own set of exercises like these depends on how many of the non-auto-generated exercises you want to include. Anywhere from 2 minutes to half an hour (for the whole lot - not each). But you get a lot of resources for your time invested.
I tend to use the basic gap-fill for nouns, but you can select whatever you like as gaps, including parts of words, and gaps of up to 3 words long. I usually include the word list at the bottom, but you can choose to leave it out.
The prompt gaps exercise is great for those (AQA AS style) grammar cloze activities where the student has to change a prompt (verb, adjective etc) according to the context.
The context gaps (write gaps) activity is designed to be used in situations where there is only one possible word that will fit according to semantic and/or syntactic context clues.
Long gaps allows you to remove whole sentences from the text. I tend to use it to remove adverbial expressions.
Find it (Find the French / Spanish) is good for checking undertanding of the text and for presenting vocabulary in context.
Then there are all those other auto-generated activities.
